I think ascendants change every 2 hours or so, on average..so from 12 to 3 am..you'd only have a choice between 3 ascendants at the most. First you find out what they are ..by "doing one for midnight, 1am, 2am, to see the differences" like you juz said.
So say u find out from 11 am to 12.30 am the asc was in Cancer. From 12.30am to 2am it was in Leo and from 2am to 3.30am it was in Virgo.
Then you'd have to figure out what ascendant is more like her. What the face she shows to the world is. You might think it's nothing like Leo and Virgo..and pick Cancer as her asc.
So here comes the degree part...Unfortunately, even if you guess her ascendant, the aspects IT makes to other planets can be very different due to the degree it's in. ie A Cancer ascendant at 29 degrees (at the end of cancer on the astro wheel --each sign has 30 degrees--) and a Leo mars at 1 degree would be in conjunction...because Leo follows Cancer...so her mars would be nearly exactly on her asc. A cancer ascendant at the start of cancer ..at 1 degree, would make no aspect to her Leo mars. This goes for other aspects as well ...like trine, sextile etc.
Another ie..to make it clearer. Say your Sun was at 29 degrees Aries and your Venus was at 1 degree Taurus. On the astro wheel...ur Sun and ur Venus would be nearly exactly on top of each other...even if they are in diff signs so they'd be conjuncted. If your sun was at 1 degree Aries (right at the start of Aries...like if u were born on the 21st march) it would make NO aspect to your venus.
That goes for the ascendant to...
In my example where 11am to 12.30 am was Cancer.
11 am would be 1, 2 degrees in Cancer
11.30 am would be 10 degrees in Cancer
12 am ...say 15 degrees
12.30...29 degrees
as it moves through Cancer...
